Calvados is an apple French brandy, obtained from distilled cider. It has the appellation AOC (Appellation d’Origine Contrôlée) for the ones produced in a large part of Normandy.
There are three different Calvados AOC according to the part of Normandy where is produced :
-« Calvados Pays d’Auge » (25% of the total production of Calvados) is the result of distilled cider obtained from apples of the French Pays d’Auge region.
-« Calvados Domfrontais » (1% of the total production of Calvados) is the result of distilled cider obtained from apples of the French Domfrontais region and constituted of at least 30% of pery.
-« Calvados » (74% of the total production of Calvados) is the result of distilled cider or pery obtained from Norman apples and pears.
READ A LABEL OF CALVADOS :
« Fine » : Distilled cider matures at least 3 years in oak barrels.
« Vieux » : Distilled cider matures at least 5 years in oak barrels.
« Hors d’Age » – « XO » -: Distilled cider matures at least 6 years in oak barrels.
Calvados Michel BEUCHER are « Calvados AOC« , obtained only from apples. They are also organics.
